Russian easter koulitch

4 medium size koulitchs



570 g plain flour
150 ml warm milk
50 ml Water
150 g Caster sugar
10 g fresh yeast
3 eggs
150 g melted butter
1/2 teaspoon salt
75 g dried sultanas soaked in 2 tablespoon of Rhum for 30 minutes and drained
50 g candied orange in small cubes
50 g chopped almonds
2 tablespoons orange blosson water ( optionnal)
powedered sugar
1 tablespoon lemon juice
1 eggwhite

In a small bowl pour warm milk and water, 1 tablespoon of sugar and sprinkle yeast on it. Mix and let stand until the yeast has dissolved and doubled. Put in a large bowl add half of the flour, mix and cover with cling film, let stand 40 minutes or until doubled.

Separate eggs, whisk  egg whites.

Beat together egg yolks, sugar then add melted butter, water orange blossom , salt, pour in the flour mixture. Add remaining flour, then add the white eggs. Cover the dough with the clingfilm and let raising for 1 hour.

Turn out the dough onto a lightly floured work surface, add dried fruits(almonds/sultanas and candied orange ) and knead a few times. Divide the dough in 4 pieces. Roll each piece into a ball and drop into prepared molds.

Place it on a baking tray in the oven. Heat the oven à 100°C for 10 mn then at 150°C for around 45 /50 minutes or until a wooden skewer inserted in the center comes out clean.

Let koulitchs cool before icing.

For icing , blend white egg , powedered sugar and the tablespoon of  lemon juice . Ice the top of the brioche and let the incing drip down the sides .
