Date paste with coconut
Lately, I started to use date paste that can be considered as a delicious substitute for nut butter, sweet marmalades and honey. Sometimes, I just grab a spoon and eat my favorite date paste with coconut straight from the jar. It is a great pleasure to enjoy it every now and then!

INGREDIENTS
15 fresh and soft dried medjool dates
1/2 cup shredded coconut
3 tbs lemon juice
up to 1/2 cup filtered water

DIRECTIONS

Pit the dates and place them in a bowl. Add shredded coconut,a bit of water and lemon juice.

Blend the mixture until completely smooth and creamy. If too thick, add more water.

Place the date paste in a jar. Store in the fridge up to 10 days.
