Homemade rucola pesto
I just love homemade rucola pesto! It brings sun to my kitchen and makes me think about hot summer days in Italy. It tastes the best with a piece of rye bread or spelt spaghetti. Make it quick in the evening and enjoy it’s rich flavor the next day. Yummy!

INGREDIENTS
2 bunches (50g) fresh rucola
1 small bunch (10-15g) fresh thin garlic greens
1 small bunch (10-15g) fresh basil
1 clove garlic
10 spoons olive oil
5 roasted pecan nuts
1 tbsp lemon juice
Salt
pepper

Clean all the herbs well and place them in a bowl (remember to remove the stringy stalks). Add garlic, 5 spoons olive oil, nuts, lemon juice, salt and pepper. Blend the pesto slowly for about 5 minutes. At the end it should be nicely smooth. Season it if necessary. It should have a strong, salty flavor.

Place the rucola pesto in a jar and cover with with another 5 spoons of olive oil. You may store it in the fridge for about a week.
