Green salad with goat cheese and figs
This salad together with fresh baguette and a glass of dry red wine is perfect for a light supper. It’s easy to make but you should really use high-quality ingredients. A strong taste of goat cheese mixed with the sweet flavor of fresh figs and sour balsamic sauce gives an amazing result. The secret is to make the balsamic creamy sauce at home! I’m sure you will love this dish!

1 pack lamb’s lettuce
½ cucumber
6 slices prosciutto crudo (Italian ham)
3-4 fresh figs
1 roll of creamy goat blue cheese
2 tbsp olive oil
5 tbps balsamic vinegar
5 tbsp plum syrup (I made fresh one from 300g plums boiled on a low heat with 2 tbsp of honey)
1-2 tbsp water

First of all make the balsamic creamy sauce. Place all the ingredients in a small pot, bring the mixture to boil and then cook it for a couple of minutes (max. 10min. on high heat). It’s ready when the sauce becomes thick.

Now prepare the salad. Place the lamb’s lettuce on a big plate. Cut the cucumber into small bars and add them to the salad. Tear the prosciutto into pieces and place them on the top. Now cut the cheese into slices and the figs into quarters. Add them to the salad as well. Sprinkle the salad with some olive oil and your amazing balsamic cream. Eat it with a piece of fresh baguette.
