First of all you have to cut the beetroots and its stems (with leafs) into small pieces. Put it into pot with hot water (it should cover the beetroots) and boil it for 5-10 minutes.
In this moment you can also add some lemon juice – it will give the soup nice and refreshing sour taste.
Now you have some time to rest and read a book or go shopping (that’s my choice) because this base should get cool.
When it is already cold cut cucumber and radishes into small pieces and add 1 liter of buttermilk. Mix it with spoon – you will see that the color is getting less intense, but still beautiful.
Now add some salt and black pepper (as much as you like), cut some dill and chive and sprinkle the soup with it. You can add more lemon juice if you like and few ice cubes if you want it to be cooler.
