Plum marmalade with saffron
Plums are a perfect ingredient of autumn tarts, pies and marmalades. Last week, I had a box of plums in the fridge and I decided to turn them into a yummy marmalade that would match my favorite fluffy spelt pancakes. A fabulous breakfast!

INGREDIENTS
1 kg plums
2 tbsp buckwheat honey
1 tsp cinnamon
1 tsp nutmeg
1 tsp saffron
1/4 tsp (or a pinch) grounded red pepper
1 tsp vanilla extract

Wash the plums and pit them. Then place in a big pot together with all the other ingredients and 125ml water.

Bring the mixture to boil. Once boiling, turn down the heat and simmer for about an hour. If it sticks to the pot, add a bit of water.

Blend the marmalade until completely smooth, pour into clean jars and close. You can freeze the jars to keep the marmalade fresh for longer.
