Heat the butter on a big frying pen until completely melted.
In the meantime mix the egg white with the egg yolk. Cut the croissant halves into two and soak them in the egg. Place them on a pen and fry them on both sides not longer than 2-3 minutes.
Squeeze the orange juice and mix it with honey. Pour the mixture on the croissants. Let the liquid evaporate.
Sprinkle the croissants with a pinch of cinnamon and serve them immediately.
