Preheat the oven to 200°C.
Chop the herbs. Peel and cut the pumpkin and sweet potatoes into long thick pieces. Place them in a bowl.
Add a pinch of salt, pepper, freshly chopped herbs and oil. Mix it all together well.
Place the vegetables in the oven on a flat baking tray lined with a piece of baking paper.
Reduce the temperature to 180°C and roast them for about 30min.
Then turn them to the other side with a wooden spatula and roast them for another 20min. They should get gold and crispy.
Serve those tasty fries immediately with a bit of salt or your favorite sauce.
