Warm pumpkin salad with pearl barley
Wanna eat something light and healthy for lunch? Try my warm pumpkin salad with pearl barley! It’s delicate and easy to make. Sounds fantastic, tastes even better. Don’t waste your money in another crapy sandwich bar. Take care of your body and use the seasonal vegetables to prepare simple meals. Creative healthy cooking became my obsession!

INGREDIENTS
400g pumpkin
1,5 cup pearl barley (available for instance in Polish or Russian shops)
100g goat feta cheese
fresh parsley
nutmeg
cinnamon
Salt
black pepper
olive oil

DIRECTIONS

Peel the pumpkin and cut it into cubes. Then place them in a big bowl and mix with a teaspoon of nutmeg, cinnamon, salt, a pinch of pepper and 2 tablespoons of olive oil. Place pumpkin pieces on a flat baking tray lined with a piece of baking paper. Bake them in the oven preheated to 180°C until they get soft.

In the meantime cook the pearl barley according to the guidelines on the package (Pearl barley is very popular in Poland, where you may buy it in every market. I love its delicate taste!). Cut feta cheese into cubes and chop the parsley.

Place warm pumpkin pieces and the cooked pearl barley in a bowl, add 1 tablespoon of olive oil and mix it well. You may season the salad with some more spices. At the end place feta cheese cubes on the top of your salad. Sprinkle it with freshly chopped parsley and serve immediately!
