Simple cake with strawberries
Some of my friends asked me for this recipe, so I decided to place it immediately on the blog. I made this simple cake for my birthday party. It’s really refreshing and light thanks to fresh strawberries and coconut oil. Enjoy!

INGREDIENTS
200 g baking sugar
150 g wheat flour
50 g chestnut flour
200 g coconut oil
1 flat tbsp baking soda
4 tbsp coconut milk
a pinch of vanilla
4 eggs
+ 200 g fresh strawberries

DIRECTIONS

Separate the egg whites from the egg yolks. Put the egg whites aside.

Mix the egg yolks with sugar until fluffy and white. Add the flour, baking soda, vanilla and coconut oil (which should be very soft or even liquid).

Mix it all together well. At the end add the coconut milk and mix the dough again.

Beat the egg whites with a pinch of salt until stiff and mix them gently with the dough. It should stay quite thick, but definitely not stiff.

Cut the strawberries into quarters.

Place the dough in a round baking tray (diameter 26cm) lined with a piece of baking paper and sprinkle it with fresh strawberries.

Bake the cake for about 45 minutes or until golden brown in 180°C.
