Healthy spelt salad with goat cheese
Lately I’ve started to eat a lot of spelt products. Why? Because they not only healthy, but also tasty. Spelt grains are for instance a great ingredient of summer salads. Their especially recommended for those who have a bit weaker immune systems.

INGREDIENTS
1 cup cooked spelt grain
1 cup cooked buckwheat
1/2 red pepper
1/2 red onion
4 small tomatoes
50g lamb’s lettuce
1 small goat cheese (e.g. Crottin de Chevre)
Salt
black pepper
1 tbsp Herbes de Provence
4 tbsp olive oil
few drops of lemon juice

Place the cooked grains in a bowl. Then cut the pepper, onion, tomatoes and cheese into cubes. Add them to the grains and use spices mentioned above to strengthen the salad’s flavor. Now mix the salad gently. At the end add some lamb’s lettuce and mix it all together once again. It’s ready!
