Rice with tomato sauce and plantains
Not everybody knows how to cook plantains (called also cooking bananas). This is the reason why I recommend you to try out my simple autumn recipe! Plantains taste very well with rice and a basic tomato sauce. I’m pretty sure that you will like them.

INGREDIENTS
2 cups brown rice
400ml canned tomatoes
1 small onion
1 tbsp oil for frying
1 tsp sugar
Salt
colored pepper
2 green plantains
2 eggs

Cook the rice in 1 liter of slightly salted water for about 20 minutes. Then wrap the pot with rice in a towel to keep it warm and place it aside.

Pour a bit of oil on a pen and fry the chopped onion for a moment. Add the tomato sauce and sugar and cook until smooth. At the end season the sauce with salt end pepper.

Peel the plantains and cook them in boiling water for 10 minutes.

Then prepare the fried eggs.

Serve the warm rice with tomato sauce, and a fried egg on top. decorate the dish with plantains slices. Enjoy!
