Peel the horseradish and grate it to tiny shreds. Do the same with cooked egg whites.
Set the cooked egg yolks in a bowl, add the olive oil, lemon juice, maple syrup, mayonnaise and yogurt. Mix until smooth.
Join the egg yolk sauce with the shredded horseradish and egg whites, mix well. Season with salt and pepper. Serve with ham, turkey, hard-boiled eggs and/or sweet raisin bread.
