Orange vegetables supper
Sometimes I feel like eating something warm for supper. This time I’ve decided to prepare a mix of my favorite orange vegetables: carrots and sweet potatoes. A big pinch of a fresh lime thyme makes this dish a perfect option for a rainy summer evening.

INGREDIENTS
3 big carrots
2 sweet potatoes
a bunch of fresh lime thyme leaves
truffle and plain olive oil
spices: salt, pepper, chili flakes

DIRECTIONS

Cut sweet potatoes into small cubes and fry them on 5 spoons of olive oil until soft. In the meantime season them with a pinch of salt, pepper and chili flakes.

Peel off the carrots and make thin and long carrot slices with a usage of a vegatable peeler.

Fry the carrot slices on a spoon of truffle olive oil with some fresh lime thyme leaves, salt and pepper.

When carrot slices become soft, mix them with sweet potato cubes.

It’s ready! Now sit on your sofa with a warm blanket on your knees and enjoy the taste of this comforting dish.
