Mix all the dry ingredients in a bowl. Add coconut oil, honey and water.
Stir the dough with a wooden spoon until smooth. It shouldn’t be too thick. Try to get a consistency of a greek yogurt.
Place the dough in a middle-sized metal loaf pan covered with a thin layer of coconut oil and lined with baking paper. Let the bread grow for an hour in a quite warm place.
Then sprinkle the loaf with a spoon of chia seeds. Bake it for an hour in the oven preheated to 200°C. Use one of the bottom shelves in order not to burn the top of the loaf.
