Dissolve the yeast with the warm water.
Gather the flour, the sugar, the salt and mix together.
Add the yeast with water then the egg and milk.
Knead until the dough no longer sticks and becomes elastic (approximately 20 minutes).
Add gradually the heated lumps of butter.
Knead the dough until the butter had been completely “absorbed”.
Leave to grow for 2 hours in a warm place (or a night in the refrigerator). Cover with a damp cloth.
Degas*the dough and mould 4 small regular balls.
Place them on a tray with baking paper and leave to grow for another hour.
Preheat the oven to 180°C (gas n°5).
Smear the brioches with milk using a brush and sprinkle with sesame seeds.
Put the tray in the oven for approximately 20-25 minutes and check the progress with a knife.
Cut in two and garnish.
*Degas: bang the dough to get nil of the carbon dioxide produced during the dough’s growth.
