Beetroot soup with coconut milk
Beets are tasty and very healthy! I especially like them in soups. This one contains chili paste and coconut milk and is just perfect for a rainy and windy afternoon like today.

INGREDIENTS
5 beetroots
1 parsley root
2 carrots
1 onion
1 small sweet potato
3 cloves garlic
1 tbsp coconut oil
1 vegetable stock cube (homemade one will be the best)
200 ml coconut milk
1 tsp chili paste
1 tsp maple syrup
himalaya salt
fresh dill

DIRECTIONS

Wash the vegetables, peel them and cut into big pieces. Place them in a pot together with 1,2 liter of cool water, coconut oil, maple syrup and vegetable stock cube.

Bring the soup to boil and cook it for 1 hour.

Take the soup of the heat and blend it until completely smooth. Add the coconut milk, chili paste and a bit of salt. Then mix the soup well.

Serve it warm with a bit of coconut cream and fresh dill on top.
