INGREDIENTS
600 g Mussel(s)
1 whole Shallot(s)
1 bulb Garlic clove(s)
100 g chorizo
0.5 bunch Flat leaf parsley
50 ml Sherry
1 whole Red chilli(s)
1 whole Bay leaf (-ves)

Wash the mussels in cold water and remove the beards

Check the mussels are closed tight and alive

Peel and finely dice the shallot and garlic

Finely dice the chilli

Remove the skin form the chorizo and cut into cubes

Pick and roughly chop the parsley

Heat a large saucepan until very hot

Add the mussels, sherry, shallot, garlic, bay leaf and chorizo to the pan

Put a lid on the pan and cook the mussels for 3 minutes until all of the mussels are open

Finish the dish with the red chilli and chopped parsley

Serve immediately with some crusty bread.
