Friends cooking : banana pancakes by Ola
There are moments in my life when I change into a “Sugar Monster” and I just have eat something sweet. Otherwise I could destroy everything around me like an earthquake. So what can be better to kill the monster than a couple of healthy and delicious banana pancakes? I’ve been looking for a perfect recipe and finally I’ve found the magical ingredient that makes the difference. White almond butter!!! You can make it on your own, but I’m too lazy to do that, so I usually buy it in the organic food shop. Let me share the recipe.

INGREDIENTS
1 banana
2 eggs
3 tbsp oatmeal
1 tsp cinnamon (or more if you like)
1 tbsp white almond butter
1 tbsp desiccated coconut
coconut oil for frying
 
for topping
100g strawberries
100g blueberries
4 tbsp balsamic vinegar
a pinch of vanilla
(plain yogurt)

Before you start making pancakes, cut the strawberries into small pieces. Stir them in a bowl with the blueberries, balsamic vinegar and vanilla. Put the mixture aside for a few minutes.

In the meantime place all the other ingredients in a food processor (you can use a blender instead) and mix them for a few seconds. Heat the coconut oil over a medium heat. Form four small round pancakes or one bigger if you like. Flip it carefully after around 2 minutes and fry it one more minute on the other site.

Serve those delicious pancakes with some strawberry-blueberries mix and a splash of plain yogurt if you like.
